Chef Easy Tip

Chef Easy Cooking Tips

  • Choose russet potatoes: Their high starch content helps create a fluffy interior and crispy exterior.
  • Avoid overboiling: The potatoes should be very tender but still hold their shape to prevent them from falling apart.
  • Don't skip the freezer: Freezing the potatoes for 2 hours helps firm them up and reduce surface moisture, encouraging a crispier crust when roasted.
  • Use hot fat: Adding the potatoes to preheated oil and ghee encourages browning and crispiness.
  • Give them space: Avoid overcrowding the baking tray. Leaving space between the potatoes allows hot air to circulate and helps them brown evenly.
  • Season while hot: Adding Chef Easy Fried Chicken Seasoning (Mild) immediately after roasting helps the seasoning coat the potatoes while preserving the flavour of the herbs and spices.

Instructions

  1. Prepare the potatoes

Peel the russet potatoes and cut into approximately 2-inch chunks. Slightly uneven pieces are fine, as they help create different crispy textures during roasting.

  2. Boil the potatoes

Place the potatoes in a saucepan with the cold water and baking soda. Bring to a gentle simmer over medium heat and cook for approximately 10 minutes, or until very tender and the edges begin to soften while the pieces still hold their shape.

  3. Drain and cool

Carefully drain the potatoes and arrange them in a single layer on a wire rack placed over a baking tray. Allow them to steam dry for approximately 5–10 minutes.

  4. Freeze the potatoes

Place the cooled potatoes, uncovered, in the freezer for 2 hours, keeping the pieces separated. This helps firm up the potatoes and dry their surfaces for a crispier finish.

  5. Preheat the oven

Preheat your oven to 425°F (220°C).

  6. Heat the oil and ghee

Add the ghee and 1 tbsp + 1 tsp vegetable oil to a deep baking tray. Place in the preheated oven for approximately 5 minutes, until the fat is hot.

  7. Coat the potatoes

Remove the potatoes from the freezer and transfer them to a large bowl. Sprinkle with potato starch, drizzle with the remaining 1 tsp vegetable oil and toss gently until evenly coated. Be careful not to break the potatoes apart.

  8. Roast until crispy

Carefully remove the hot baking tray from the oven and arrange the potatoes in a single layer, leaving space between each piece. Turn gently to coat in the hot fat. Roast for approximately 25 minutes without turning to allow a crispy crust to develop.

  9. Flip and continue roasting

Carefully turn each potato and roast for another 25 minutes, or until golden brown and crispy.

  10. Finish roasting

Carefully drain off any excess fat from the baking tray. Return the potatoes to the oven for another 5–10 minutes, until the exterior is deeply golden and crispy.

  11. Add Chef Easy seasoning

Remove the potatoes from the oven and immediately sprinkle with 2 tsp Chef Easy Fried Chicken Seasoning (Mild). Toss gently while hot to coat evenly.

  12. Serve and enjoy

Serve immediately while the potatoes are golden and crispy on the outside and soft and fluffy on the inside.
